Hot Smoked Salmon & Avocado Quiche

A delicious and healthy quiche that will become a family favourite. Perfect for lunch, dinner or just to have to hand in the freezer.

We are trying to get more Omega 3 in our diet at the moment so I created this dish as an easy option for lunch or dinner. It's the perfect dish to have to hand in the freezer! Omega 3 is so important for kids as they play a key role in growth and development and have numerous health benefits. Lucky for us, both our kids love fish so this quiche was a winner in our house.

The pastry is not a roll out pastry. You will need to press this one into the pan, but make sure you don't end up with really thick pastry around the edges. Use your fingers to spread it up the sides. The pastry mix is very greasy from the butter and once it's baked you will see the butter bubbling on top. Please don't be put off by this, the bubbles will dry up as the pastry cools. The end result is not overly greasy at all.

The filling fits perfectly in my quiche tin (25cm). If yours is bigger, you can add another egg.

Enjoy this quiche with a fresh salad on the side.

 80 g butter
 200 g almond meal
 1 large egg
 170 g tasty cheese
 100 g sour cream
 5 large eggs
 150 g hot smoked salmon (found in the fridge section in most supermarkets)
 1 tbsp dill, finely chopped
 ¼ tsp lemon zest
 ½ avocado, thinly sliced

Preheat oven to 170° and grease a large quiche tin.


Put butter in Thermomix bowl and melt, 2mins/80°/sp2.


Add remaining pastry ingredients and mix, 10sec/sp3. Scrape down the sides and blades and repeat.


Press mixture into the quiche tin with your hands.


Bake for 10-12 minutes until slightly brown. Keep an eye on it, if the pastry starts to bubble, prick it with a fork.


Once baked remove from the oven and set aside. Your pastry will have bubbles on top from the butter, these will disappear while you prepare the filling.


Add cheese to Thermomix bowl (don't worry about cleaning it) and grate, 8sec/sp8.


Add dill, lemon zest, sour cream and eggs and mix, 30sec,sp3.


Flake through salmon and stir with a spatula.


Pour mixture into pastry.


Lay avocado slices on top.


Bake for 20-25mins, until fully cooked.


Remove from oven, slice and serve or eat when cool.
