Keto Chocolate Shell
SHARE THIS:

We all remember Ice Magic as kids I'm sure. I used to love cracking that hard chocolate shell on top of my ice cream! I recently tested a diary free custard recipe and thought I could freeze it for an easy keto friendly ice cream option...then I thought a keto version of Ice Magic would be an AMAZING addition!

I'm all for quick and easy and this really couldn't be easier. Ok...I might have cheated a bit using store bought chocolate but it's what I had to hand and it turned out so well! I have also included an alternative recipe for those who prefer to make it from scratch though.

Finding a ready made chocolate that is also keto friendly is hard. They will often be filled with artificial sweeteners which just don't sit well with me. Lindt 95% dark chocolate is easy to find in most supermarkets and it is low carb. It's great for a square after dinner and is also dairy and gluten free. If 95% is too bitter for you, you can either add some powdered sweetener or go for a lower percentage chocolate.
