Keto biryani

An Indian favourite made keto friendly just for you! This biriyani is full of flavour and highly nutritious. The usual rice is swapped out for cauliflower and practically any type of meat can be used! Lamb or beef mince, or even chicken thighs! Change it up every time.

 1 tbsp ghee
 500 g lamb mince/beef mince/thigh fillets
 300 g cauliflower rice
 2 tbsp coriander stems, chopped
 ½ onion, diced
 2 cloves garlic, finely chopped
 1 tbsp minced ginger
 ½ tbsp garam masala
 1 tsp ground cumin
 1 tsp ground cinnamon
 ½ tsp ground turmeric
 ½ tsp dried chilli flakes
 2 tomatoes, diced
 100 g green beans, chopped into 1cm pieces
 2 cups baby spinach leaves
 1 cup corriander leaves
Topping suggestions
 ½ cup natural yoghurt
 ¼ cup slivered almonds.

Melt ghee in a fry pan over medium heat and add onion, garlic, coriander stems and ginger. Cook for 3 mins.

Add spices and diced tomato and cook for 2mins or until fragrant.

Add mince and cook until brown.

Add green beans and cauli-rice, cook for 3 mins.

Add spinach and coriander leaves and stir through until spinach has wilted.

Serve topped with almonds and yoghurt.
