Chicken Nuggets

Having children who eat gluten free and preservative free means I cook almost everything from scratch. I much prefer to cook nuggets from scratch anyway so I know that they will be eating healthy chicken meat, rather than the awful fillings you find in the store bought ones.

When I make them I use a nut free coating so the kids can take any leftovers in their lunchbox. If nut free isn't a concern for you, almond meal will work perfectly.

I always use a mix of nut or seed flour and pork crackle crumbs when I coat chicken. The pork crackle crumbs help to give the chicken a delicious crunch plus they are great for a bit of extra fat. If you would prefer not to use them, just add a bit more flour.

Parmesan cheese also adds flavour to the crumb mix. If you are dairy free, you can either leave it out or swap it for nutritional yeast flakes which will still give it a yummy cheesy taste plus a boost of B12 and fibre.

Chicken Mix
 120 g broccoli
 10 g butter
 400 g chicken breast, roughly chopped
 1 large egg
 ½ tsp garlic powder
 ½ tsp onion powder
 pinch of salt & pepper
Crumb Mix
 30 g pork crackle crumbs
 30 g parmasen cheese, grated
 2 tbsp sesame seeds
Egg Wash
 1 large egg
 1 tsp dijon mustard

Preheat the oven to 180° and line a tray with baking paper.

In a small bowl add the egg wash ingredients and whisk gently until combined.

Combine crumb mix ingredients in another bowl and set aside with the egg wash.

Place the broccoli in the Thermomix bowl and chop for 5sec/sp5.

Add the butter and cook for 3mins/80°/sp1.

Pour broccoli into a medium sized bowl.

Add chicken to the Thermomix bowl (no need to clean) and chop for 5sec/sp7. Add to the broccoli.

Add the remaining ingredients to the chicken and using your hands, combine well.

Scoop a small amount of chicken mix into your hands (approximately a heaped dessert spoon size) and shape into a nugget. Place onto the lined baking tray and repeat until all of the mix has been used.

Get the bowls of egg wash and crumb mix.

One at a time, dip a nugget into the egg wash and then the crumb mix. Coat well and place back on the baking tray.

Repeat with the remaining nuggets. If you have extra crumb left, do a second coating.

Place baking tray in the oven and bake for 25minutes or until golden.
