Green Eggs & Ham Cups

Perfect for a breakfast on the run or have a couple with salad for lunch, these green eggs and ham cups are low carb and very tasty. Using 3 simple ingredients, smoked ham, egg and a sprinkling of fresh spinach, these are a hit with the big and small kids!

 12 large eggs
 6 slices smoked ham, halved
 ½ cup baby spinach leaves, finely chopped

Preheat oven to 180° and grease a muffin tray.


Line muffin tins with ham slices.


Crack an egg in each cup and sprinkle with chopped spinach.


Cook in oven for 15mins or until eggs are cooked.


Enjoy hot or cold.
