Choc Coconut Balls

These delicious choc coconut balls are the perfect sweet fix and only 1.3g net carbs each!

 1 ½ cups dessicated coconut
 4 tbsp coconut oil, melted
 3 tbsp sugar free maple syrup or Sukrin Gold syrup
 1 tsp vanilla extract
 100 g 90% dark chocolate

Combine all ingredients except chocolate in a bowl.

Shape into small balls gently. If you roll the mixture in your hands it will fall apart, it needs to be gently pressed into shape.

Break up chocolate and place in a microwave proof bowl. Place in microwave and cook in 30 sec bursts until melted.

Place a ball in the chocolate and using a fork and small spoon, gently roll ball until coated. Pick the ball up by sliding it onto the fork so any extra chocolate can drip back into the bowl, and place on a wire rack. Continue with the remaining balls.

Place in fridge until chocolate sets. If you would like a thicker and smoother chocolate coating, you can coat the balls a second time.
