Chicken & Haloumi Naked Burger with Avocado Dressing

This recipe is a fresh spin on a naked burger and we just love it.

Succulent chicken burger, salty haloumi and a delicious, lemony avocado dressing. It's super easy, quick and great for the whole family.

Burger Patty
 500 g chicken mince
 2 tbsp almond meal
 1 tsp thyme leaves, fresh or dried
 zest of one lemon
 1 large egg
Avocado Dressing
 1 medium, ripe avocado
 1 garlic clove
 ¼ cup light extra virgin olive oil
 1 tsp dijon mustard
 1 tsp lemon juice
Remaining Naked Burger Ingredients
 2 tbsp extra virgin olive oil
 180 g haloumi, sliced into 6
 1 large tomato
 2 cups baby spinach or fresh salad leaves
Avocado Dressing

Add garlic clove to thermomix bowl and chop, sp 7 for 3 seconds. Scrape down and repeat if necessary

Add remaining dressing ingredients and blend on sp 5 for 2 mins, less if you'd prefer a chunkier dressing.

Put to the side until everything is cooked.

Combine all patty ingredients in a bowl and shape into 4-6 patties, depending on your preferred size.

Heat one tablespoon oil in a frypan over medium heat, or on the BBQ. Cook patties for approx 5-7 mins on each side until fully cooked.

Remove from heat, wrap in foil and allow to rest while you cook the haloumi.

If using a frypan, wipe clean with paper towel.

Add remaining oil and heat over a medium heat.

Cook haloumi for 2 mins each side until golden.

Remove from heat.

Assemble

To serve, start with the baby spinach or mixed salad leaves. Top with sliced tomato and burger patty. Spoon avocado dressing on top of the patty and then top with a slice of haloumi.

Eat while warm and enjoy!
